Peri-Peri Chicken Recipe
Got a craving for something spicy but want to feed a hungry family without breaking the bank? You can literally throw this sauce together in 15 minutes, and then it's spicy, lean goodness all the way! Feel free to adjust the number of chillies depending on the spice tolerance of your guests / family. I generally just tell mine to harden up - spice is life, right?
- 6 Chicken breasts Thickly sliced
- 5 cloves Garlic
- 1/3 cup Olive oil extra virgin
- 1/4 cup Lemon juice
- 8 Small, hot chillies
- 2 tbsp Red wine vinegar
- 1 Lemon zest
- 1 tsp Smoked paprika
- 1 tsp Salt
- 1 tsp Pepper
- 2 Bay leaf
Add everything but the chicken breasts, olive oil and bay leaf to a blender. Blend all the stuff on high for 20 seconds while laughing crazily.
Transfer the peri-peri sludge to a saucepan, along with the bay leaves, and simmer for 15 minutes. Take of the heat and stir through the olive oil.
Coat chicken strips in the sauce, and grill in a double sided grill for 6 minutes, or in a frying pan / bbq for 5 mins a side.
